Nikole Pearson
Biochemist, Food System Rebel, Caretaker-in-Chief, and Creator of the Heirloom Diet

I am a scientist by training, an analyst by trade, and a nutritionist by necessity.
For over 15 years, I worked as an environmental scientist, analyzing complex biological systems and managing federal contracts. My career was built on data, rigor, and risk assessment. I never expected to apply those skills to my own kitchen—until my husband, Jay, was diagnosed with a Grade 2 brain tumor.
Faced with a life-altering crisis, I did what I was trained to do: I went to the literature. I analyzed the inputs of our food system with the same scrutiny I once applied to environmental impact statements. I realized that to support Jay’s recovery from a craniotomy and 33 rounds of radiation, "standard" nutrition wasn't enough. We needed a protocol built on biochemistry, not marketing.
"I’m the creator of the Heirloom Diet, a framework designed to help people decode the science of what they eat and give them the tools to quit the ultra-processed food system in a way that actually fits into real life."
I eliminated ultra-processed foods and rebuilt our diet from the ground up using nutrient-dense, whole foods.
The results were undeniable: Jay navigated treatment with resilience, and together we lost a combined 130 pounds while reversing our own metabolic warning signs (high cholesterol, pre-diabetic A1C).
But the process nearly broke me. Sourcing, planning, and cooking scratch-made meals took 2–6 hours a day while I was working and caregiving. I was drowning in logistics.
That’s when Jay, an engineer and software developer, stepped in. He built the Heirloom Diet Meal Planner to solve the logistics problem that was drowning us. He engineered the system so I could focus on the nutrition.

Today, I am the Co-Founder of Heirloom Diet, where I merge my background in Biochemistry, Microbiology, and Systems Analysis with my certifications in Nutrition and Health Coaching.
My mission is simple: To decode the science of what we eat and provide the practical tools families need to opt out of the ultra-processed food system without burning out.
Nikole's Qualifications
Certified Nutritionist
Bridges academic science with practical dietary application. Ensures recommendations translate into real-world eating patterns that support metabolic health and sustainable family routines.
Certification in Neuro-Linguistic Programming (NLP)
Addresses subconscious belief systems, habit formation, and identity shifts around food. Helps clients move beyond “willpower” and instead reshape thought patterns that drive food decisions.
Certification in Health & Wellness Coaching
Provides structured client support, behavior-change methodology, and accountability systems. Ensures the framework is not just educational, but actionable and sustainable for families under stress.
Bachelor’s Degree in Biochemistry and Molecular Biology
Provides deep understanding of how food interacts with the body at a molecular level — including metabolism, inflammation pathways, blood sugar regulation, and cellular energy production. Supports the environmental mismatch model by understanding how modern inputs influence biological systems designed for ancestral conditions.
Bachelor’s Degree in Microbiology
Adds expertise in gut microbiome dynamics, immune system interaction, and the role of food in microbial balance. Strengthens HELEN’s whole-food approach by recognizing how ultra-processed ingredients disrupt microbial ecosystems.
